Kahwa Pistachio Baklava Rolls

Crispy filo rolls filled with pistachios, almonds, and a hint of honey, finished with a Kahwa-saffron syrup for a luxurious Kashmiri–Middle Eastern treat.
Ingredients
- 12 sheets filo pastry
- 1 cup pistachios (finely chopped)
- ½ cup almonds (finely chopped)
- 3tbsp honey (mixed into the nut filling)
- ½ tsp ground cardamom
- ½ cup melted butter
For Syrup:
- ½ cup water
- ¼ cup Kahwa blend (diluted in 3 tbsp warm water)
- Few saffron strands
- 1 tsp rose water
Method
Preheat oven to 180°C (350°F).
Mix pistachios, almonds, honey, and cardamom until lightly sticky.
Lay filo sheets, brush with butter, and spread nut-honey mixture evenly.
Roll tightly into logs and cut into 2-inch pieces.
Place on a greased tray, brush tops with butter, and bake for 25–30 minutes until golden and crisp.
Prepare syrup: simmer water, Kahwa, saffron, and rose water for 5 minutes. Let cool slightly.
Pour warm syrup over the rolls and allow to soak.
Garnish with chopped pistachios and rose petals.
