Kahwa Saffron Paneer Korma (Vegetarian, Kashmiri Inspired)

A regal Kashmiri-inspired korma where Kahwa is infused directly into a creamy saffron-almond gravy. The blend’s natural honey sweetness, rose, and spice warmth from cardamom, cinnamon, and saffron make this dish a royal indulgence.

Ingredients (Serves 4)

  • 250 g paneer, cubed
  • 1 large onion, finely sliced
  • 2 tbsp ghee
  • 1 tbsp cashew-almond paste (soaked nuts ground smooth)
  • ½ cup yogurt (whisked, full-fat)
  • ½ tsp Kashmiri chili powder
  • ¼ tsp turmeric powder
  • ½ tsp garam masala
  • 1 tsp ginger-garlic paste

2 tbsp Kahwa blend + ½ cup warm water

  • 2 tbsp cream
  • Salt to taste
  • Garnish: saffron strands, rose petals, almond slivers

Method

Heat ghee in a heavy-bottomed pan, add onions, and cook until golden brown. Remove half for garnish.

Add ginger-garlic paste and sauté. Mix in cashew-almond paste, chili, and turmeric.

Reduce heat, stir in whisked yogurt, and cook until smooth.

Add diluted Kahwa (blend + water) and paneer cubes. Simmer on low for 8–10 minutes.

Stir in cream, garam masala, and salt. Cook another 2–3 minutes until rich and fragrant.

Garnish with fried onions, saffron, rose petals, and almond slivers.
