Ingredients

For the Rose-Saffron Cream:

  • 1 cup heavy cream (chilled)
  • 3 tbsp Shahi Gulab
  • 1 tsp rose water
  • A few saffron strands (soaked in 1 tbsp warm milk)

For Assembly:

  • 6–8 meringue nests (store-bought or homemade), crushed
  • 1 cup mixed berries (strawberries, raspberries, blueberries)
  • 2 tbsp chopped pistachios
  • Edible dried rose petals (optional)
  • Edible silver leaf (optional, for garnish)

For Pistachio Crunch:

  • 1/4 cup pistachios (roughly chopped)
  • 2 tbsp sugar (optional)
  • 1 tsp Shahi Gulab
  • Pinch of salt

Method

Prepare the Pistachio Crunch: Heat sugar in a nonstick pan until it caramelizes lightly. Stir in honey, pistachios, and a pinch of salt. Spread on parchment to cool, then crush into shards.

Make the Cream: Whip chilled cream to soft peaks. Gently fold in rose water, saffron milk, and Shahi Gulab until fluffy and lightly tinted.

Assemble the Layers: In dessert glasses or bowls, layer crushed meringue, berries, whipped rose-saffron cream, and pistachio crunch. Repeat layers.

Finish: Garnish with dried rose petals, edible silver leaf, and a final drizzle of Shahi Gulab.
