Ingredients
For Halloumi
- 200 g halloumi cheese, cut into thick slices
- 2 tbsp kahwa blend (diluted with 2 tbsp water)
- 1 tsp olive oil
For Pomegranate Salsa
- ½ cup pomegranate arils
- 2 tbsp fresh mint, finely chopped
- 2 tbsp cucumber, finely diced
- 1 tsp lemon zest
- Salt and pepper to taste
Method
Heat a grill pan and lightly brush with olive oil.
Place the halloumi slices on the grill and cook until golden marks appear.
Brush the slices generously with diluted kahwa on both sides, allowing the glaze to caramelize slightly.
In a bowl, mix pomegranate, mint, cucumber, lemon zest, salt, and pepper to make the salsa.
Plate the glazed halloumi with a spoonful of fresh salsa on top.
